The chef, Donald Labillois, ambassador and professor of terroir cuisine, has always met the expectations of clients while adapting to new tendencies and remaining true to himself. The chef offers a generous and delicious table whereby freshness, refinement and authenticity are sure to stimulate your pallet!

The menu features fish, seafood and game meat. Charming and ample breakfast offerings are served daily as of 6:30 AM. Do not miss our famous brunch served every Sunday, a food lover's delight!

With over 25 years of experience in the kitchen, Donald Labillois has built a rich and inspiring path—both behind the stove and in the classroom. A former culinary instructor, he has passed on his passion to new generations while continuing to nurture his own with discipline and creativity.

Originally from Gaspésie, he draws inspiration from local ingredients, deeply rooted culinary traditions, and the joy of bringing joy to others. Now at the helm of La Couvée restaurant, he offers generous, friendly, and flavorful cuisine that reflects his journey.
